One of the healthiest thing you can do for your family is to
bake you own bread. I was talking with
someone just recently who was convinced it is the type of bread that really
makes the difference, but just baking the bread yourself from wholesome ingredients
will make a big difference. Most bread
you buy at the store is made from flour that is filled with chemicals. Fortified, pestified, bleached, and bromated
are all things that have removed the true nutritional value of the wheat. All these things they do to the flour to make
it rise better and more predictably, but it is not as digestible with all these
changes. So even if you stay with just
white bread and make it from good flour you are much better off. I use King Arthur flour. It is all I can find
locally that is just pure flour nothing added.
Now you may be saying that is all well and
good, but baking bread must be quite a chore. Nothing could be further from the
truth. Bread is composed more or less of
four ingredients and it does not matter how you mix them as long as you allow
for a rise and bake, you will get bread.
The first of the ingredients is flour.
There are many kinds of flour you can use, but if you just stick to
wheat flour there is basically three kinds; pastry, all-purpose, and bread
flour. Pastry flour is low in protein
and because of this it does not develop gluten as well. This makes it perfect for cakes and pastries
that are light and flakey. The next kind
is all purpose flour and this one is in the middle on the protein content. It is very versatile and can be used for nearly
everything. The last one you will see is
bread flour which has high protein content and develops gluten quickly. This allows the bread to rise faster and more
evenly. Enough about flour; the next
ingredient is water, or basically anything that is liquid and not acidic. So you could use water, milk or eggs as the
liquid. Each will give a different taste
but all will make bread. The last two
ingredients are yeast and salt. The salt
helps the yeast to grow more slowly to produce a more even loaf. I use rapid
rise yeast as it is the easiest to work with and very predictable. Now there are hundreds of recipes out there
for white bread and they are all basically the same, 4 cups of flour to about a
cup or cup and a half of liquid, 2 teaspoons to over a tablespoon of yeast and
a teaspoon of salt. Some include butter
or oil and some include sugar; both add to the flavor and texture. If you just add the basic ingredients together,
kneed, rise, and bake you will have bread.
